Roasted Rainbow Veggies

I like to make this dish colorful and just use whatever I have at the time. Here I included purple potatoes, beets, yellow squash and green beans. Coat lightly with olive oil and salt and pepper. Roast it in the oven at 425 degrees for 30 minutes for a flavorful side dish.

Last night's dinner of roasted rainbow garden veggies and King salmon.
